This cheese is made using unpasteurised milk. It's a clothbound Cheshire. It is slightly crumbly & has good flavour that's not over powering with a slight creaminess about it. It's a very traditional tasting Cheshire, not as strong as our mature but still very tasty. Very well balanced.
