While modern factory-made Cheshires are often sold young and mild, our Mature variety is aged to develop the deep, soul-satisfying characteristics that defined Cheshire cheese in its 18th-century prime. It is a rare survivor of the "Long Keeping" tradition, offering a flavor profile that is nearly impossible to find in the modern day.
